Kodo Millet Sevai (Steamed Millet Noodles)
A healthy and delicious twist on traditional sevai, made with protein-rich kodo millet.
This recipe yields a versatile base that can be enjoyed in many ways, like savory upma or a sweet coconut milk dish.
Ingredients:
- 1 cup kodo millet flour
- 1/2 teaspoon salt (or to taste)
- Water (enough to make a thick batter)
- Oil (for greasing)
Equipment:
- Mixing bowl
- Whisk
- Sevai press (or muruku press with a sevai attachment)
- Idli steamer
Instructions:
- Make the Dough: In a mixing bowl, combine kodo millet flour and salt. Gradually add water, whisking continuously, until a thick, smooth batter forms. The consistency should be slightly thicker than pancake batter.
- Steam the Sevai: Grease the idli plates with oil. Fill the sevai press with the batter and press out thin noodles onto the greased plates.
- Steam for 10 minutes: Place the idli plates in a steamer filled with enough water and bring to a boil. Steam for 10 minutes, or until the sevai becomes translucent.
- Enjoy! Once cooked, remove the sevai from the steamer and allow them to cool slightly. You can enjoy them plain, tossed in a savory upma mixture, or drizzled with a sweet coconut milk sauce.
Tips:
- Work quickly with the dough as it can thicken up. If it becomes too stiff, add a little more water to adjust the consistency.
- You can adjust the amount of water depending on the brand of kodo millet flour you use.
- Experiment with different flavors! Add chopped vegetables to the batter or drizzle the cooked sevai with your favorite chutney.
