  1. Make the Dough: In a mixing bowl, combine kodo millet flour and salt. Gradually add water, whisking continuously, until a thick, smooth batter forms. The consistency should be slightly thicker than pancake batter.
  2. Steam the Sevai: Grease the idli plates with oil. Fill the sevai press with the batter and press out thin noodles onto the greased plates.
  3. Steam for 10 minutes: Place the idli plates in a steamer filled with enough water and bring to a boil. Steam for 10 minutes, or until the sevai becomes translucent.
  4. Enjoy! Once cooked, remove the sevai from the steamer and allow them to cool slightly. You can enjoy them plain, tossed in a savory upma mixture, or drizzled with a sweet coconut milk sauce.

Note

Work quickly with the dough as it can thicken up. If it becomes too stiff, add a little more water to adjust the consistency. You can adjust the amount of water depending on the brand of kodo millet flour you use. Experiment with different flavors! Add chopped vegetables to the batter or drizzle the cooked sevai with your favorite chutney.
